Cherry Almond and Vanilla Muffins

I love having picnics!!! Of course I prefer the part of eating the picnic goodies more than carrying them around in boxes and baskets until you have found the right spot to set up your picnic blanket and relax. Anyhow I think picnics are definitely worth it! And for the perfect picnic you need to have something sweet, I recommend these cherry almond & vanilla muffins. They are really fluffy and fruity on the inside and have a little crunch from the sliced almonds on the outside.

Ingredients (makes 12 muffins):

  • 250g flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • a pinch of salt
  • 120g sugar
  • 1 egg
  • 15og sour cream
  • 80ml vegetable oil
  • 1tbsp. vanilla sugar
  • 300g fresh or frozen cherries
  • slivered almonds for the topping

Preheat oven to 175°C. Line a muffin pan with paper cups. Combine flour, salt, baking powder and soda in a bowl and set aside.

In another bowl combine egg, vanilla sugar and sugar and mix until creamy. Add sour cream and oil one after another. Fold in flour mixture using an electric mixer. Last but not least fold in the cherries.

Divide dough in paper cups. Drizzle slivered almonds on top and bake in oven for about 20 minutes until they have turned golden brown.
