Cheddar Cheese Bites

Cheddar Cheese Bites
Look like little biscuits, don't they? Probably I should have written about these biscuits around Super Bowl but no matter the time of the year they are the easiest snack ever. They go perfect as an appetizer to any party or when you have last minute guests.I usually make double batch and freeze half. Whenever short of time, just throw them in the oven and there you have, cheesy bites no one can resist. They can easily be flatten and turned into cheese crackers but I prefer them flaky so I leave them little thicker.
Cheddar Cheese Bites
When making the dough, which only has 4 ingredients, it may seem it requires water but knead it a little ( have to work those biceps, don't we? ) and soon it forms a soft ball. When done I just roll it out like I'd do cut out cookies but instead I do some cut out cheese bites. Place them on trays, put in the freezer for several hours to make sure they are well frozen and then keep them in zip-lock bags until needed or you can shape the dough into logs and just cup coins just before baking. Of course, you can freeze the dough as a ball and make the cut outs just before baking but in my opinion it takes longer since you have to thaw a little so you can roll the dough  Cheddar Cheese Bites
