Cauliflower spring onion soup | vegan cauliflower soup - soup recipes are perfect for cold weather. I would say you won't regret trying this delicious and creamy cauliflower soup in this rainy weather. It is comfort & healthy soup for all ages. I love to have soups as clear and creamy as well. I hope you all have read my vegetable clear soup before. In that, I added vegetables without grinding. This gobi soup is creamy in texture because I precooked the cauliflower and spring onion together with the addition of pepper and garlic flakes.
After that, I pureed it and made soup. I found this creamy soup is more filling to start my day. The weather was too breezy so I decided on making this quick and easy cauliflower soup. I had it as simple without topping. You may add some croutons and enjoy.

How to make creamy cauliflower soup:
- Remove stem and cut cauliflower into small pieces.
- In a bowl, add chopped pieces, some salt, and hot water. Soak it for 5 mins.
- Drain the water completely and keep it aside.
- Heat saucepan, add oil, garlic flakes, white part, and spring onions, and saute well.
- Now add the green part of spring onions and peppercorns. Stir well
- Add cauliflower to it and some salt needed for the soup
- Saute well and add a cup of water. Let it boil for 5 mins.
- Cool them and grind to a fine puree.
- In the same saucepan, add the grounded puree and some water.
- Cook till the raw smell leaves.
- To make it thicken, mix 1 tbsp of cornflour powder with 1 tbsp of water and add it to the soup.
- You notice the soup gets thickening. Turn off the stove.
- Add some pepper powder and coriander leaves and serve hot.
