Cauliflower Soup Recipe
This Cauliflower Soup Recipe is so simple and delicious it will make its way to your table again and again!Using fresh cauliflower, vegetables, and making a basic roux, this recipe for Cauliflower Soup really kicks it up a bit.
I tend to add more vegetables just because we like a thicker soup, but really, this soup recipe is pretty fool-proof. Enjoy!

A slight adaptation from a Taste of Home 2003 recipe, this tasty and filling Cauliflower Soup recipe will be a huge hit in your home, too!
Ingredients
- 1 Medium Head Cauliflower, Broken into Florets
- 1 Medium Carrot, Shredded
- 1/4 Cup Celery, Chopped
- 1/2 Onion, Chopped
- 2 1/2 Cups Water
- 2 teaspoons Chicken or Vegetable Boullion
- 3 Tablespoons Butter
- 3 Tablespoons Flour
- Salt and Pepper
- 2 Cups Milk
- 1 Cup Cheddar Cheese, Shredded
- 1/2 to 1 teaspoon Buffalo Sauce (Optional)
Instructions
- Combine Cauliflower, Carrot, and Celery and bring to a boil.
- Reduce heat, simmer for 15 minutes.
- Meanwhile, melt Butter and add Onion. Saute until tender.
- Mix in Flour. Add Milk carefully. Bring to a boil, stir, and cook for two minutes or until thickened.
- Stir in the Cheese and the Buffalo Sauce, if desired.
- Stir into the Cauliflower and vegetables mixture.
- Serve.
