Avocado, cabbage, mesclun mix microgreens with walnut vinaigrette
J. and I just came home from a very nice weekend trip this morning, and while unpacking I couldn't stop thinking about that cabbage and those avocados we bought in our way back. The urge to eat a fresh raw salad was irresistible!
This is typically my favorite kind of lunch when I know I'm going to have a busy day. Yes, a large salad - it satisfying and certainly keep me energized for the whole afternoon until dinner time.So I made this 'casual' salad and served it with a simple walnut vinaigrette and garlic toasted french bread. It was satisfying! We're just finished organizing everything for the week, and while I take a little time to sit down and sip a cup of tea, I wanted to share with you this green casual salad!
