I thought I would post a few Vitamix recipes, as I do use my vitamix for a fair few recipes and never think to make any blog posts.
Ingredients:
150ml Oil
150g Caster Sugar
2 Eggs
1 Tsp Mixed Spice
1/2 Tsp Cinnamon Powder
1/2 Tsp Baking Powder
200g Self Raising Flour
100g Peeled Carrots
100g Raisins
In the vitamix blender add the oil and eggs
Then add the sugar, mix slowly working up to high-speed and blend for about a 1 minute. The mixture will become a thick white-ish creamy texture. Pour into a jug and wash out the blender.
Add in peeled and washed carrots.
Turn on the machine and on medium speed until the carrots are finely chopped – should only take about 10 seconds.
Pour back in the creamy egg oil mixture and add flour, spices and baking soda. Briefly mix on low-speed.
Add the raisins to the jug
Using a spatula mix in the raisins into the batter.
I love the vitamix, as this all took less than 3 minutes, where as traditional carrot muffins take a lot longer as grating carrots is a time-consuming task.
Scoop the mixture into 12 muffin cakes
Bake in the oven at 180c for about 25-30 minutes and enjoy!
