Hope you had a great fun on this day, and did all dhoom masti. We enjoyed this day at home, we usually avoid this day to go out because everywhere is so crowded and party place that day, loud music. For our toddler, we avoid it and enjoyed our day at home.

What is carrot coconut cake?This eggless bread is very tender and light cake recipe to make without any fuss. Fabulously tropical carrot combined with crunchy coconutty flavours, that's awesome. It was soft, dense and a little crispy on the outside, which is exactly what a loaf cake should be.
We are in the first week of January, I just can't believe how last year (2019) flies has flown by! This the time of the year where you'll get fresh seasonal veggies and carrot is one of them.
When my husband saw fresh orange carrots again into the market, they will take it immediately and said me to make some yummy carrot cake again for this New Year Eve.
My husband is a huge fan of homemade cakes! Like it’s his favorite cake and I hardly make it for him, unless he requests it for this New Year again, so I said okay.

I really don't need a chance to bake a cake 😃 For me, it's like a stress buster😍! So on that special day of New Year, I made this cake.
When I usually bake something I am trying to adding few other ingredients which is my favorite one. Few months back, I made a coconut cake. So thought to combine carrot with coconut, I still went ahead and baked this delicious and really easy carrot coconut cake.
For my big sweet tooth, this delicious treat was sorted for couple of few days..hehehe 😃😃
This cake are a perfect treat to any get together or Christmas or New Year Eve party. The flavors are making me crazy excited!

Ingredients for Bread :
Dry Ingredients :
Whole Wheat flour/Atta - 3/4 cup
All purpose flour/Maida - 3/4 cup
Powdered Sugar - 1 cup
Baking Powder - 1 and 1/2 tsp
Baking Soda - 1/4 tsp
Cinnamon powder - 1/2 tsp
Salt - 1/2 tsp
Fresh Grated Carrot - 1 cup
Dessicated coconut - 1/4 cup + 1 tbsp (for sprinkle that is totally optional)
Roughly chopped almonds and walnuts
Wet Ingredients :
Oil - 1/3 cup
Buttermilk - 1/2 (you can use milk)
Vanilla Essence - 1 tsp
Other Ingredients :
butter paper

Preparation Method :
1. Preheat oven to 350 degrees (F) or 180 degrees (C). Lightly grease a loaf pan; set aside.
2. In a large bowl combine sieve the flour, baking powder, baking soda, salt, and add cinnamon powder.
3. In a separate bowl, beat the oil, buttermilk and sugar together until it looks melted.
4. Add the grated carrots, the vanilla essence, mix it well.
5. Carefully fold the dry ingredients into the wet mixture until mixed in, then gently swirl in the coconut flakes.
6. Pour mixture into prepared pan, sprinkle the top with chopped crushed dry fruits(almonds and walnuts), and place pan in oven to bake for 55-60 minutes, or until the top is golden and a cake tester comes out clean.
7. Allow loaf to cool in the pan for at least 10 minutes before removing and transferring to a cooling wrack to completely cool.
