Carrot and Cucumber Salad
A friend shares her way of prepare raw salad at home. The main ingredient in seasoning is lemon juice. I was surprise with the simple seasoning raw salad can turn out so good. Hope you give this recipe a try!
Carrot and Cucumber Salad
Recipe from Vivian Pang KitchenCarrot and Cucumber SaladIngredients:1 medium size carrot, shredded1 medium size cucumber, remove seeds and shreddedFew stalks coriander leaves, bite length size1 big red chili, deseeded , thinly slicedHandful of ground peanuts, lightly crushed1 tablespoon sesame seeds
2-3 tablespoons lemon juice (from ½ lemon)2-3 bird chilies, thinly sliced (more if prefer more heat)2-3 teaspoons light brown sugar½ teaspoon salt2-3 tablespoons olive oil (can substitute with sesame oil)*Mix all together till sugar dissolve and set aside
Methods:1. Place all vegetables in a mixing bowl. Add in the lemon juice mixture. Toss all ingredients together in mixing bowl evenly. The salad is ready to be served!
