"canadian" Butter Tarts.

 good morning! today i have a recipe for you! this sweet treat is one of my favorites for as long as i can remember. however, you can rarely find them anywhere except for canada. if you've ever enjoyed the delicious treat, then today is your lucky day. if you haven't then you have a nice new treat to try. recipe yields about a dozen butter tarts.
what you'll need: 1 cup raisins1/2 cup soft butter1/2 cup packed brown sugar1 pinch salt1 cup corn syrup2 eggs, lightly beaten1 teaspoon vanilla
directions:first, prepare muffin pans by rolling out pie dough. you can use store bought or make your own. i always make my own pie dough from scratch. cut out 4-inch (approx) circles and fit dough circles into muffin cups. then set aside in fridge until ready to fill. next, in a small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes. in a large bowl, using a wooden spoon, mix together the soft butter, brown sugar, salt and corn syrup. stir well until sugar is dissolved and butter is creamed. once mixture is creamed, add the eggs and vanilla and mix well. drain raisins. retrieve tart shells and divide raisins equally into all shells, then divide butter mixture into all tarts. if you don't like raisins you can opt out of adding them. fianlly, bake tarts at 400F for 15-20 minutes. the filling will be lightly browned but still bubbling. if you would like a more runny filling, bake for about 15 minutes. if you like them to be firm, bake them for the full 20 minutes, even adding another minute or two if you wish. lastly, let cooked butter tarts cool in pans for 10 minutes after removing from oven, then remove and place on racks until completely cool. then enjoy!
