Welcome back to Cooking with Kids: C is for Carrot Salad with Garlic Yoghurt.
This is a Turkish recipe that is served as a side dish or a meze. My daughter loves it and she helps me prepare it. She is a bit camera shy these days so I am afraid I won't share any photos of her today.
The recipe super simple, healthy and can be prepared quickly.
Ingredients (for a small bowl as seen in the photo)
One largeish carrot, grated*
2 tablespoons of olive oil
2 cloves of garlic,peeled and chopped or grated
2 heaped tablespoons of yoghurt
pinch of salt
Gloss a small saucepan with 2 tbs of olive oil. Add the garlic and saute them for 1-2 minutes. Add the grated carrots. Let the carrots cook for 7-10 minutes adding splashes of water as necessary.
When done, let it cool and mix with yoghurt, add pinch of salt.
Drizzle some olive oil and serve with bread sticks,pita bread and other crudites.
*When I prepare this recipe for the children, we use the thin teethed side of the grate. This way, when the carrots are cooked and mixed with yoghurt, the salad has the consistency of a dip which my children like better.
