Butternut squash has always intimidated me. It’s funny shaped and looks complicated but it’s really pretty simple!
This is what it looks like. See what I mean… weird looking.
Ingredients:
1/4 Italian Dressing
1/4 Parmesean Cheese
2 Tbsp Olive oil
Garlic powder to taste
Salt & Pepper to taste
Preheat your oven to 375.
You will cut it in half and then cut off the hard outside. This is the “hardest” part (har har). The outside is hard as a rock. A potato peeler worked pretty well. You will also scrape out the seeds. Once you have done that, dice the squash into cubes.
Now throw all of your ingredients into a ziploc bag. Shake it up to coat all of the squash. I think during the making of this squash I said that it looked like cheese cubes, cantaloupe, and pineapple!
Cover a pizza pan with foil and spray with spray butter. Spread out the squash. Bake for 15 minutes and then mix it up to flip. Bake for 15 more minutes or until a fork goes easily through the center.
There you have it! A delicious and healthy side dish.
