Over the weekend we went to the local country park and found loads of blackberry bushes and filled to big tubs of fresh, sweet and small blackberries. What else to make with lots of blackberries…Warm sweet and soft blackberry muffins!
Ingredients:
2 Eggs
300ml Milk
1 Tsp Vanilla
120g Melted Butter
350g Plain Flour
135g Caster Sugar
2 Tsp Baking Powder
175g Blackberries
In a big bowl add 2 eggs and beat
Add milk and vanilla and beat again
Pour in melted butter and whisk
Add flour, baking powder and sugar
Stir all together
Add blackberries into the batter
Add gently fold the blackberries into the batter
Scoop into muffin cases
Bake in the oven at 180c for 20-25mins or until golden brown and springs back to the touch.
Enjoy warm or cooled
Great way to use up those summer berries!
