Best Pie Recipes: S'mores Pie

This S’mores Pie recipe is cool and refreshing. Since it is a refrigerator pie, you will have to plan ahead.

I know it took quite a bit longer to get the right consistency probably due to the fact that I accidentally used more cream cheese than called for. Oops. I would make it first thing in the morning if you want it ready for dessert that evening just to be safe.

I think you could get creative with toppings, here. I topped it with Oreo cookie crumbs that I had leftover when I used it as a garnish for something else.

Excellent and cool take on S'mores. You'll love it!

Plan ahead--thanks to accidentally doubling the cream cheese, it took much longer than four hours to chill. Fantastic flavor so I may make the same mistake again!

Ingredients

  • 6 Ounces Semi-Sweet Chocolate Chips
  • 1/4 Cup Whipping Cream
  • 2 Tablespoons Dark Colored Corn Syrup (I used Light Corn Syrup because I had it on hand)
  • 1/4 Cup Water
  • 2 teaspoons Vanilla Extract
  • 4 Ounces Cream Cheese, Softened (I used the whole thing on accident--and it works!)
  • 1 Cup Whipping Cream
  • 1/2 Cup Powdered Sugar
  • 1 Cup Mini Marshmallows
  • Topping!
  • 7 Ounce Jar Marshmallow Creme
  • 1 teaspoon Milk
  • 1 Cup Mini Marshmallows (optional)
  • Graham Cracker Crust

Instructions

  1. In saucepan, heat chocolate, 1/4 Cup Whipping Cream, Corn Syrup, and Water.
  2. Heat and stir constantly over medium low heat until melted.
  3. Remove from heat and stir in Vanilla Extract. Cool 20 minutes, stir every so often.
  4. In a bowl, combine the Chocolate Mixture and Cream Cheese.
  5. In a mixing bowl, Beat 1 Cup Cream with Powdered Sugar until soft peaks form.
  6. Fold Sweetened Cream in Chocolate Mixture.
  7. Pour Marshmallows into bottom of Graham Cracker Crust.
  8. Spoon in Chocolate Mixture.
  9. Cover, Chill at least 6 hours or until well-chilled. (minimum of 4 hours)
  10. Spoon on Topper.
  11. Topper: Mix Marshmallow Creme and Milk. Stir in Mini Marshmallows if desired. Makes 1 3/4 Cups.

Notes

The original recipe calls for 6 ounces of chopped chocolate. I thought it just as easy to use chocolate chips.
