Best Ever Fat Free Vegan Gravy

Ahhh gravy.  Where would we be without it.

Potatoes and gravy, meatloaf and gravy, biscuits and gravy, chicken fried steak and gravy.

Gravy seems to be a huge component of our Standard American Diet.

But once you become a Brand New Vegan and start watching the kinds of foods you eat, gravy seems destined to disappear forever.  I mean it’s made from meat drippings right?  It’s made from fat.

Well, you may be thinking about those little gravy packets in the store, the ones you just add water to.  You might say, “maybe I can still have those and get my gravy fix.”   I know, I used to think the exact same thing.

Um…..no.

You ever stopped to wonder what exactly is in those packets?  I mean they look innocent enough BUT…..

Enriched Wheat Flour (Flour, Niacin, Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Wheat Starch, Salt, Beef Fat, Hydrolyzed Soy, Wheat, And Corn Protein, Onion, Caramel Color, Corn Syrup Solids, Sodium Caseinate (Milk), Spices (Including White Pepper), Garlic, Natural Flavor, Disodium Inosinate And Guanylate (Flavor Enhancers), Extractives Of Paprika, And Yeast Extract.

Wow – doesn’t that sound yummy?

Corn syrup solids?  Flavor enhancers?  Not to mention a ton of Sodium.

No, sorry but these just won’t cut it.  They’re definitely not vegan, and they’re definitely not healthy.

But don’t worry, there is a better way to get your gravy fix, a healthier gravy I might add, and it still only takes just a few minutes to whip up a batch.

Let’s make some of the best Vegan Gravy you’ve ever tasted.

Best Ever Fat Free Vegan Gravy

This will be the easiest Vegan Gravy you ever made, I promise.

Measure out about 1/4 cup of Whole Wheat Flour into a small saucepan.

kitchen bouquetTurn on your burner to low heat.  We want to ‘toast’ the flour to give it a richer flavor.   But not too much – we don’t want burnt flour!  When it starts smelling like cooked toast, continue on.

Now add a couple of heaping tablespoons of nutritional yeast, your spices, and stir those up until combined.  We’re still on low heat here.

Now slowly add 2 cups of low-sodium Veggie Broth while gently stirring.  Use a whisk and break up any clumps that may form.

Add 2 tablespoons of low sodium soy sauce, the mustard, and the kitchen bouquet and stir.

The kitchen bouquet gives it a nice caramel coloring, and can usually be found in the condiment section of your grocery store.  Look for it next to the A1 and Worcestershire.

Finally, increase the heat a little until it starts to thicken.

That’s it.  I told you it was going to be easy.

Those little patties up there in the photo are a traditional English Dish called…. (and I love the name)…

Bubble and Squeak

It was a way of using up the night’s leftovers, usually mashed potatoes, cabbage, and veggies.  They would mash everything up together, and fry it in a skillet until brown and crispy.

My version was similar only I breaded them with Panko Crumbs and baked them.  Thank you Alice for the inspiration!  They were indeed yummy….

…. especially smothered in yummy Vegan Gravy :)

Best Ever Fat Free Vegan Gravy An easy, rich vegan gravy mix that literally takes minutes to prepare. Low in fat and sodium this will be you're goto gravy mix from now on... Ingredients
  • ¼ cup whole wheat flour
  • 2 heaping tablespoons nutritional yeast
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ⅛ teaspoon black pepper
  • 2 cups low sodium vegetable broth
  • 2 tablespoons low sodium soy sauce
  • ½ teaspoon prepared mustard
  • ½ teaspoon kitchen bouquet browning sauce
Instructions
  1. Toast dry flour in saucepan over low heat until aromatic
  2. Whisk in nutritional yeast and spices
  3. Slowly stir in veggie broth, breaking up any clumps
  4. Add soy sauce, mustard, and kitchen bouquet and stir to combine
  5. Heat on medium-low heat until bubbly and thickened
