Beetroot rice recipe - easy to pack for lunch recipe. Different from usual rice varieties and your kids will love for sure especially for its color 😊 Beetroot has many health benefits which is a vegetable we should include in our diet atleast once in a week. This beetroot pulao recipe is a very easy one pot meal to try at home.

How to make beetroot rice:

  1. Rinse rice for 2 times in tap water and soak in enough water for atleast 20 mins.
  2. Meanwhile chop beetroot, potato ,onion and green chillies.
  3. Heat a pressure cooker, add oil and ghee, then garam spices(Bay leaf, cinnamon, cloves and cardamom)
  4. Add in chopped onions , green chillies , saute till onions turns translucent.
  5. Now add ginger garlic paste. Saute till the raw smell goes off.
  6. Add chopped vegetables and salt. Mix well, saute for 2 mins in low flame.
  7. Now add the spices red chilli powder, garam masala and turmeric powder.
  8. Mix well,add 2 cups of water. After the water starts boiling, add soaked and drained rice and give a quick mix.
  9. Close the cooker with a lid and put whistle. Keep the flame low for 10 mins and turn off the stove.
  10. Open the cooker once the pressure completely released..
  11. Garnish with coriander leaves and fluff it gently without breaking the rice.
  12. Serve hot with raita or with your gravies and curries.
