As part of my Wallace and Gromit Big Bake week I was chatting to a fellow colleague and mentioned beetroot cake, so instead I decided to make a beetroot brownie, lower in fat and healthier – why not!
Beetroot has many health benefits such as having a good source of folate and manganese which can reduce risk of heart disease and stroke. The red color can not be broken down by the body and can cause your wee or poo to be red, strange fact but I thought I would share!
Ingredients:
100g Butter
200g Dark Chocolate
250g Caster Sugar
1 Tsp Vanilla
100g Self Raising Flour
25g Cocoa
2 Eggs
200g Cooked blended beetroot
In bowl add butter and dark chocolate
In the microwave melt the butter and chocolate 30 seconds at a time.
Add the sugar, flour, vanilla and cocoa and stir
Beat in 2 eggs
Add the blended beetroot to the batter
Stir well ensuring no lumps.
Pour the batter into a greased baking tray
Bake at 170c for 25 minutes and allow to cool for 5 minutes.
Once cooled, sprinkle a little icing sugar
Slice into pieces
