Batata Vada

A new post...something spicy/savory this time rather than my regular sweet posts...it's Batata Vada!

Batata Vada and samosas have been a childhood favorite for almost everyone I think! But to make them perfect and just like the way we get in eateries/restaurants/street food joints is the key factor when we make them at home.
Of course these will be healthier than those which we get outside.
I had made these and posted a picture of my batata vada's on Instagram and Facebook,and I got so many requests to share my recipe!
Well,I never thought of sharing recipe of batata vada before as I thought that this recipe will not be enticing to anyone but then I realized that although you will find thousands of recipes to make these but people always want to make them perfect. So this is small effort to share my recipe of batata vada,hope you all will like it and try it.

Here I am not sharing my step-wise pictures,pardon me for that! I will share stepwise pictures of all recipes on my social media pages!

Batata Vada

First prepare the potato masala.
In a pan add water and potato halves.
Let them cook till completely cooked.
Drain the water and let the potatoes cool.
Once cooled,peel the skin.
In a pan,add oil.
When its hot,add hing,green chilies,mustard seeds,ginger minced.
When that splutters,add onion and all masala powder with salt and sugar.
Mix well.
Add the boiled and peeled halves.
Add the cilantro chopped.
With a vegetable masher,mash the potatoes so that entire mixture turns doughy.
Once it cools,make balls of that dough/mixture.
For the cover,in a mixing bowl,add all the ingredients mentioned under "For Cover".
Slowly add water,little by little to make thick yet flowing mixture of flour/batter.
Heat oil in a deep frying pan.
When its hot,drop one potato masala / dough ball in the batter.
Coat the potato masala ball with batter and drop it slowly with hand in the oil.
Fry it till golden and done!
Serve hot with chutney,sauce and tea!

  • Always drop the vada in oil for frying with hands. Try to avoid spoons to do this step. That's the trick to get perfect coated batata vada.
  • Be careful when you drop the vada with hand,do not burn yourself!
  • When the oil is hot,take each potato masala ball,drop in batter,coat it with batter and then drop in oil.
  • Do not fry many vadas at the same time. As they will stick to each other and loose shape.
  • Do not add more baking soda,or the batter will be inedible and will taste weird.
  • Adjust the spices,as per your personal preference.
