I am happy to announce that the two goals I had set for myself for this time in quarantine have been coming along quite well. I have almost exhausted most items in my pantry. A few more weeks and soon the remaining shall disappear (in my stomach) too.

Today I am sharing the easiest and my go-to recipe for when I have some ripe bananas but I am not in the mood to bake any bread with it. We always have muesli for either hot breakfast or to make a yogurt parfait. This is the one we use. I prefer it over granola because it has a lot more fiber and a lot of nuts and seeds (e.g. sunflower seeds, almonds, raisins, dried cranberries, etc.) i.e. more nutritious value.
Ingredients
1 cup muesli ¼ cup honey1 banana
½ cup chocolate chips
1 tsp vanilla extract (optional)
Instructions
- Preheat oven to 350 degrees F.- Mash the bananain a large bowl.
- Add muesli, chocolate chips and honey and mix them all together
- Add vanilla extract (optional) - Mold mixture into bite-sized balls (I use a round spoon or a small scoop)
- Space them evenly on the parchment paper - Bake for 25-30mins.
- Enjoy!
