Banana Fudge Bar

Ingredients:
100g Butter
200g Digestive biscuits
100g butter
150g White Chocolate
2 tsp vanilla
100g caster sugar
1 egg
150g Plain flour
2-3 mashed bananas
50g White Chocolate

In a blender add the digestive biscuits and turn into fine crumbs.

Melt the 100g butter in a glass microwave proof bowl

Stir in the biscuit crumbs until all the butter is mixed in.

Press evenly the biscuit mixture into a lined oven proof dish and set aside.

In a microwave proof bowl add the 150g white chocolate and 100g butters.

Heating 20 seconds at a time and stir in between, melt the butter and chocolate mixture.

Stir in the vanilla and sugar, and then the egg slowly.

Add the flour into the mixture.

Add in and stir the mashed bananas.

Pour over the biscuit mixture

Bake in the oven for 35mins at 180c then allow to cool.

Melt the remaining 50g chocolate and drizzle over the banana fudge brownie base.

Allow to set overnight and remove from the dish.

Slice into smaller pieces
