Baking With Spirit: The Midori Round-Up

Baking With Spirit: The Midori Round-UpSo apparently Midori is a bit too challenging for most of you... that or you're all out enjoying the heat and sunshine. Below are the entries I recieved for this month's challenge (Midori), so if you ever want to know what to do with your excess melon liqueur you can return to this page for a bit of inspiration:
After a lot of mental free time spent thinking about what to make, I eventually settled on this DIY Midori & Raspberry Cheesecake. The flavours work really well together, and since it's a no-bake cheesecake there's no excuse as to why you shouldn't make it!

Apparently there are pretty much zero recipes on the internet containing Midori, but Ellen at Bake It With Booze valiantly had a go anyway and made these fantastic Japanese Slipper Cupcakes. Would you look at that colour? Not only do these contain Midori, but they also contain Triple Sec and a nice lemony kick too. A must-try!

Thanks to Ellen and myself for entering this month's challenge (yes, I am thanking myself)!
Clearly I asked for too much too soon, but fear not! Baking With Spirit is back on Thursday with a considerably easier challenge, so I hope you all feel inspired to take part. See you then!
