Baked Pumpkin Pudding Bars{healthy}

Silky, moist, light and fragrant pudding bars...without any eggs or butter...no fat at all! And also gluten free. My new love this season:)
Baked Pumpkin Pudding Bars{healthy} / Полезная Тыквенная Запеканка
800ml grated raw pumpkin 200ml buckwheat flour 10g baking powder pinch of salt 10g vanilla 2tb.s. corn starch about 100g vanilla powdered sugar..or more to taste 200ml Greek yoghurt 100ml mango juice coconut flakes on top
Blend all ingredients together. Start with pumpkin cubes, then add the rest.  Preheat oven to 180C. Line 20x20cm baking dish with baking paper. Transfer the mixture onto baking dish. level and sprinkle with coconut. Bake for 45 minutes.
Enjoy hot or cold and as much as you like:)
