Ingredients for Lime Quinoa:
- 1 Cup of Quinoa
- 2 Cups of Water
- 1/4 Chopped Cilantro
- 1/4 Cherry Tomato
- 1/2 tsb of minced garlic
- 1 Lime
- salt to taste
Directions:
- Put Quinoa and water in your rice cooker.
- Squeeze lime juice. Then add minced garlic, chopped cilantro and cherry tomato. If you would like, add salt.
- Set rice cooker in “quick cooking” option.
Ingredients for Fish:
- 4 (6 ounce) fillets
- 2 Tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 1 tsp Salt
- 1/2 tsp black pepper
- 1/.4 tsp cayenne pepper
- 1 lime
Directions:
- Preheat oven to 450 degrees.
- In a small bowl, mix spices together.
- Drizzle each fillet with olive oil.
- Sprinkle each fillet with the mixture of spices.
- Squeeze lime juice over the fillets.
- Flip the fillets over and repeat steps 3-5.
- Place on baking sheet and bake until golden brown and flesh begins to flake (approximately 10-15 minutes).
*On the side, I added steamed Rapini. You may add any vegetable you like!
