A slightly different creation than My last Baileys Cupcakes but according to my friends party guests just as good!
Ingredients:
300ml Baileys
250g Self Raising flour
1 tsp baking powder
1/2 tsp salt
130g golden caster sugar
Finely grated rind of 1 large orange
Juice of 1/2 an orange
1 medium egg
90ml Rapeseed oil oil
Mix oil, egg and Baileys together for about a minute.
Add flour, sugar, orange juice and zest, baking powder and salt into the mixed egg, oil and Baileys mixture.
Mix all for about 2 minutes on medium speed.
Scoop into 12 muffin cases and bake for 25-30mins at 170c.
Remove from the oven when cooked and lightly brown on top.
For the Frosting:
250ml Baileys
300g dark
1 Orange zested
Melt chocolate over a simmer bowl of water in a glass bowl.
Add the melted chocolate to the Baileys and grated orange zest.
Mix until the frosting thickens as it cools, and slow pipe over the cupcakes.
Cut 6 Jaffa cakes in half.
Place the Jaffa cakes onto the cakes like butterfly wings and enjoy! These bad boys are rather strong in alcohol content, so consume with caution
