Almond Date Balls

A delicious dessert for a sweet tooth or when expecting some people for dinner like I do tonight. No cooking is required and it takes only around 20 minutes to prepare. It is vegan, gluten free and dairy free. The way to go :) .

Ingredients

  • 1/3 cup of dried and unsweetened shredded coconut
  • 1 cup raw almonds
  • 1/8 tsp sea salt
  • 1/2 vanilla bean, split and scrapped
  • 8-10 Medjool dates, pitted
  • 1 cup dried pineapple pieces
  • 1/4 cup dried cranberries

Instructions

  1. Add coconut to jar (Blendtec WildSide jar) and press “Pulse” 4-6 times. Put onto a plate and set aside for later.
  2. Add almonds, salt, and vanilla bean seeds to jar and secure lid and press “Speed Up” to Speed 1 for 20 seconds.
  3. Add dates and pineapple to jar and press “Pulse” 4-6 times until desired texture is reached. Use a spatula to move things in the center if needed.
  4. Stir in the cranberries.
  5. Roll into one inches balls and roll in coconut.
  6. Store covered in refrigerator for up to 3 days.
