Adhirasam is a traditional dessert / sweet popular in Tamil Nadu. Made using jaggery and rice, it has a crispy outer and soft on the inside.
A popular sweet of the Kings in the past, Adhirasam is a part of various cultural and spiritual celebrations across the state. It is also offered as a prasadam at many temples and also at homes. Because of this, it is often considered as a food for the gods.
This sweet is best consumed on the same day it is made. But it can be stored for a couple of days too.

How to make Adhirasam

Soak the rice for 30 minutes and drain well. Keep aside to dry completely.

Grind to a smooth powder and keep aside.

Heat a heavy bottomed pan.

Add little water and powdered jaggery.

Simmer till the jaggery has melted and strain.

Transfer the strained liquid back to the pan and bring to a boil.

When it reaches a soft ball stage, add the rice flour and mix.

Add the cardamom powder and stir to combine.

Ensure there are no lumps in the mixture.

Make a ball of this mixture and flatten it on a plastic sheet or greased banana leaf.

Fry the prepared adhirasams on both sides till golden brown.

Remove and drain excess oil.
