So I was browsing through the September issue of Runner’s World Magazine and I came across this recipe for a crabcake. The Curry Crab Burger with Guacamole. And may I just say it is every bit of good as it looks. Spicy, moist, buttery, and of course CRABBY. Delicious!! I fried mine in olive oil instead of grilling it like the recipe said. Also, there’s no Old Bay seasoning in it which is NOT the Maryland way. In spite of all that it still came out amazing.
The recipe goes…
Mix together 1 pound of crabmeat, 3/4 cup of corn kernels, 1/2 cup of whole-wheat panko bread crumbs, 1 large egg, 3 tablespoons of low-fat mayo, 2 tablespoons of chopped chives, 2 teaspoons of Dijon mustard, 1 1/2 teaspoons of curry powder, and 1/4 teaspoon black pepper. Form into 4 patties and grill for 5 minutes per side. Serve burgers topped with guacamole.
They have a recipe for the guacamole too but I’ll let you buy the magazine for that. I bought mine pre-made from Trader Joe’s.
