I have to bake this Nigella Lawson's banana bread!!!
All because Joyce from Kitchen Flavours said that this recipe is really really really GOOD! It is true! This banana bread is really really really GOOD! It is extra moist with lots of banana and extra delicious and extra fragrant with rum-plumped up sultanas.

Not convinced? I hope that these photos say it all...

Still not convinced? I wish that I can incorporate smells and texture into my photos and words but obviously, I can't. Well, you just have to believe Joyce and me.

Is this cake a little boozy? I like to assume that the boiling step helps to vaporise the alcohol content of the rum, making the cake more child-friendlier eat. Well, in this recipe, Nigella said not to worry giving this cake to children too!!! However, if this is your concern, you might wish to substitute the rum with fruit juice or other non-alcoholic liquid.

Make one large loaf

100 g sultanas
75ml dark rum or bourbon (I used Bacardi rum)
175g plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda (replaced with baking powder)
1/2 tsp salt
125g unsalted butter, melted
150g caster sugar (reduced to 100g)
2 large eggs
4 small very ripe bananas (mashed) (or 2 1/2 large banana, about 1 1/2 cup)
60g chopped walnuts
1 tsp vanilla extract

Put the sultanas and rum or bourbon in a smallish saucepan and bring to the boil. Remove from the heat, cover and leave for an hour if you can, or until the sultanas have absorbed most of the liquid, then drain.

Preheat the oven to 170ºC or gas mark 3 or 325ºF or 150ºC fan forced and get started on the rest. Put the flour, baking powder, bicarb and salt in a medium-sized bowl and, using your hands or a wooden spoon, combine well.

In a large bowl, mix the melted butter and sugar and beat until blended. Beat in the eggs one at a time, then the mashed bananas. Then, with your wooden spoon, stir in the walnuts, drained sultanas and vanilla extract. Add the flour mixture, a third at a time, stirring well after each bit. Scrape into a loaf tin (23 x 13 x 7 cm / 9 x 5 x 3 inches - I used 9 x 5 inches pan) and bake in the middle of the oven for 1-1/4 hrs (I baked mine for 1 hr 8 mins). When it's ready, an inserted toothpick or fine skewer should come out cleanish. Leave in the tin on a rack to cool, and eat thickly or thinly sliced, as you prefer - A thick slice for me, please!!!
