A Laid-Back Day

It's a blustery Missouri day. Yesterday I made three batches of waffles, three loaves of banana bread, and two batches of fish sticks for the kids - which means I won't have to worry about what to give them for lunch for probably a month! I don't know why lunch time is so stressful for me usually. Every morning for breakfast I make us all an enormous batch of scrambled eggs, so there's no guess work there. And for dinner they'll usually eat what we're eating (unless it's soup. I don't have the energy to sit at the table for an hour while my toddlers try to eat soup). But lunch... 
So glad I don't have to worry about that for a while. And Peter's searching for a freezer for us to put in the garage, so hopefully I'll be able to schedule one or two more kitchen days, to make lunchtime easier for the month after our June bug comes.
Today I am happy to just answer emails, offer tardy responses to comments, fool with Photoshop, and hopefully squeeze in seconds of my new favorite lunch: tilapia tacos with left-over jalapeño & tomatillo salsa and lots of taco-blend shredded cheese. Mmmmm.
