5 Minutes Nourishing Snack for Busy Times I hope you have been enjoying your week. We have been in the moving house process lately. With Lia growing so fast extra space was needed!  So you can imagine all the packing and unpacking that I have been doing! The first thing that I wanted to have set and ready was... the kitchen! And although we still have much to do (unpacking and organizing) I'm a true believer in comfort food and when times like this come in our way, a simple homemade salad, a quick 'aperitivo' appetizer or a warm bowl of pasta can always make things look better.
During the summer season, when plums were in full pick {we are about to start winter here}- one of the easiest and satisfying snack that I loved to prepared was plum and blue cheese bruschetta. Yes, this combination was inspired by mother (She was here visiting last december) combining both sweet and savory on a warm slice of toasted french bread is the ideal nourishing quick lunch that always make me feel cheerful!  And the one I enjoy the most! Not only because of it's flavors but also because of the simplicity that goes into its preparation. This aperitivo reminds me of my mom and how much we enjoyed the summer together while she was here. Preparing food, laughing and having long conversations about life and motherhood.
To make this simple and great snack you will need: ------------------------------------------------------------------ Plum and Blue Cheese Bruschetta
Slices of Bread, Toasted (any kind you like) Plums Green Leaves, (spinach or mesclun lettuce leaves) Ricotta (optional) Blue Cheese Olive oil
Simply spread the bread with ricotta, add green leaves on top of the bread, then olive oil, slices of plums and finally some blue cheese. And this is ready to eat! Serve by itself or with a bowl of soup.
