This past weekend my good friend Erica celebrated her 30th Birthday!! She is one of those count on one hand friendsJ that I spoke about in my last post
I met Erica when we were in college, I attended NCCU and she attended UNC, but we worked at Linens-N-Things together and became great friends. I remember when we first met I thought Erica was a 17 year old and was just working a part time job after school. Erica is another one of my petite friends and she looks young in the face, so oops but yea turns out she was actually older than me. She is another one of my amazing friends that I love dearly and knows she is a friend for life. I was so excited when she asked me if I would make her cake for her birthday.Of course I wanted to but I don’t claim to be the best at what I do I just enjoy doing it. Just like a wedding cake, a birthday cake needs to look great. I was happy with the end result but I learned as always things that I will do differently.
I asked Erica's sister what was her favorite kind of cake, and she said any kind...lol! I knew she had tried my red velvet before and enjoyed it so I went with red velvet with cream cheese icing. Cake and icing recipe found here.
