3 Spinach recipes for picky eaters:
All three of the recipes in this post today have spinach as the main ingredient. Yes you guessed it right; this is how I make my munchkin to eat his greens.
#1. Spinach- Egg stir fry
This is a recipe that my mother used to prepare to make me eat spinach. (hmm…now I am making it to make my son eat his spinach).
Spinach-egg stir-fry can be had as such or can be had as a side dish with rice or roti.
Ingredients
- Spinach – 1 bunch (finely chopped)
- Egg – 2 beaten
- Shallots– 4-5 crushed
- Turmeric powder- ¼ tsp
- Salt – to taste
- Coconut oil – 2 tbsp
- Mustard- ¼ tsp
- Dry red chili – 1 or 2
- Pepper powder (Optional)
Preparation
Take a pan and heat oil. Once oil is hot splutter the mustard seeds and put shallots and the dry red chili. Let shallots turn a little translucent.
Add the finely chopped spinach to this and mix well. Close with a lid and cook in low flame for 2-3 minutes.
Take egg in a bowl and add salt and turmeric powder to the egg and mix it well.
When spinach is almost cooked, add egg to this and keep on stirring continuously till the egg is done. Add pepper powder at this stage and mix well if you want to make it a little spicy. (My little one likes it spicy). Serve warm.
#2. Spinach pakoda/pakora
Reyhan likes foods that are crispy in texture. Chips and crispy french fries are his all time favorites. To satisfy his craze for crispy foods, I made spinach into crispy pakoras and it turned out to be a hit.
Spinach pakoras can be classified as an excellent evening snack, healthy and tasty.
Ingredients
- Spinach- ½ bunch (leaves separated or chopped)
- Besan flour(gram flour) -1/2 cup
- Salt – to taste
- Hing – a pinch
- Pepper powder – 1 tsp (if you want it spicy you can add more)
- Water
- Oil – for deep-frying.
Preparation
Take besan flour in a bowl and add salt, hing and pepper powder to it. Mix well or sieve.
Add water to this and make it into a tick consistency batter. Now add the spinach to this and mix well.
Heat oil in a pan and add the above mixture one big spoon at a time. When the pakoras turn light brown and crispy take it out from the oil and serve warm.
#3. Spinach Cutlet
Spinach cutlet is yet another way to make your little ones eat green leafy vegetables.
Ingredients
- Spinach – 1 bunch finely chopped
- Potato – 2 (boiled with salt and turmeric and mashed)
- Onion- 1 finely chopped
- Ginger- garlic paste – 1 tsp
- Jeera – 1 tsp
- Garam masala – 1 tsp
- Coriander powder – 1 tsp
- Chicken masala – 1 tsp
- Salt – to taste
- Chili powder – 1 tsp or according to your little ones taste
- Oil to shallow fry
- Egg – 1
- Bread crumbs – 1 cup
Preparation
Heat a little oil in a pan and splutter the jeera. Add chopped onion to this. Then add ginger garlic paste.
Once the onions become translucent add coriander powder, chicken masala and chili powder. Let the raw smell of powders go off. Then add chopped spinach and salt to this and mix well. Cover and cook for 3-4 minutes till the spinach is done.
When spinach is cooked well, add the boiled and mashed potatoes and garam masala to this and mix well. Switch off the stove. Let the mixture cool down a little.
Make small patties with this spinach potato mixture. Dip these patties in egg and then cover them with breadcrumbs.
Heat oil in a pan and shallow fry these patties till they turn brown and crispy. Serve warm with tomato sauce.
Note
- Wash spinach thoroughly with turmeric
- Spinach has salt in it already, so be careful when adding salt to the spinach dishes.
