Sugar Cookies (Dairy, Egg, Gluten, Nut and Refined Sugar Free)

This recipe works well for making cut-out cookies.  I used palm sugar which definitely gives a darker color cookie but also adds a nice caramel flavor.  I added guar gum and psyllium husk to ensure that they dough and cookie with stick together nicely.
Sugar Cookies (Dairy, Egg, Gluten, Nut and Refined Sugar Free) Ingredients
  • 1/2 cup palm or coconut sugar
  • 1/2 teaspoon sea salt
  • 1/2  teaspoon baking soda
  • 1 teaspoon guar gum
  • 2 teaspoon psyllium husk
  • 1 1/4 cup white rice flour
  • 3/4 cup tapioca or arrowroot starch
  • 1/2 cup + 2 tablespoons melted coconut oil
  • 2 tablespoons warm water
  • 1 teaspoon apple cider vinegar
  • 1 1/2 teaspoon gluten free vanilla or almond extract

Directions
  1. Preheat oven to 375 F and prepare cookie tray.
  2. In a large mixing bowl combine sugar, sea salt, baking soda, guar gum, psyllium husk, flour and starch.
  3. In a small bowl combine oil, water, vinegar, and vanilla.
  4. Add oil, water mixture to dry ingredients and stir to full combine.
  5. You may also want to use your hands to help dough form into a ball.  
  6. Place dough between two layers of parchment paper and roll until flat.
  7. Cut into desired shapes and let sit on tray for 5-10 minutes before baking
  8. Bake for 8-10 minutes.
  9. Cool on a wire rack.
