New Year’s Eve Non-Alcoholic Cocktail

A cold winter’s day and a countdown to the beginning of a New Year…although my day began early and was filled with meetings I still squeezed in some time in the kitchen..my main objective was to come up with  a non-alcoholic cocktail good enough to serve on New Year’s Eve.

. You can dress it up by serving with orange or lemon rinds cut creatively , fresh strawberries, berries  and some fresh mint leaves. The oranges I used are the Tarocco from Sicily, but you can also use juice from navel oranges…

New Year’s Eve Non-Alcoholic Cocktail

Tutti Frutti Cocktail

1 banana

1 cup fresh or frozen pineapple cubes

1/3 cup orange juice

1/3 cup lemon juice

Handful of fresh mint leaves.

Place banana, pineapple, orange juice, lemon juice in blender. Blend till  smooth. Place in refrigerator for 1-2 hours. Serve in champagne flutes and decorate with mint leaves
