How to Celebrate Lacy Oatmeal Cookie Day

Here’s my favorite recipe:

Lacy Oatmeal Cookies

you can make these gluten free also as per instructions here:

1 cup regular or gluten free oatmeal

½ cup sugar

½ cup butter

¼ cup almonds

1 whole egg

1 yolk

1 tsp ground cinnamon

peel of one organic lemon

1- 1/2 tsps baking powder

1 tsp vanilla

Place almonds and 1 cup oats in food processor till finely ground.. Add in softened butter. Once well mixed, place this mixture in bowl. Add in baking powder, whole egg and 1 yolk, grated peel of lemon, tsp of cinnamon and tsp vanilla. Add in remainder of oats unchopped, mix in by hand. Once this is well mixed cover bowl with plastic wrap and refrigerate for 30 minutes.

Preheat oven to 350. Line baking sheets with parchment paper and place 1 tsp of batter for each cookie, leave about 2 inch space between each. Bake for 20 minutes or until golden. Let cool for a few minutes and harden
