Hello people!

I just got back from a awesome holiday in Thailand. I spent 7 days at Amity Wellness Center where I enjoyed a lovely detox treatment with 2 of my best girl friends.

It was awesome and I learned so much about what is good and what is not for our body, how to eat healthy and take better care of ourselves.

Back to Shanghai I had a friend of mine staying with me for a couple of days. Unfortunately she is allergic to gluten, so I decided to make for here a gluten-free version of my blueberry scones recipe. This way we were able to enjoy a nice breakfast together

Gluten-free Blueberry Scones

This recipe can be done with normal flour as well, if you are not gluten intolerant.

Ingredients (makes 5):

  • 1-1/2 cup gluten free flour
  • 3/4 cup sour cream
  • 1/3 cup milk
  • 1/4 cup unsalted butter, cold
  • 1/4 tsp salt
  • 1 whole egg
  • 1 tsp lemon zest
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1 cup fresh blueberries (organic would be best)

Pre-heat oven to 260 C (500 F) and adjust rack to upper-middle position. In your food processor pulse flour, sugar, lemon zest, baking powder, and salt until combined, about 5 pulses

Add butter

and pulse until fully incorporated and mixture looks like very fine crumbs with no visible butter, about 20 pulses. Move to a large bowl and add the blueberries

Whisk milk and egg together, set 1 tbsp aside

measure up the sour cream and add that to the egg mixture

Pour the mixture into the flour

Using rubber spatula, fold together until almost no dry bits of flour remain

Drop 3/4 cup of mixture onto baking paper

lightly brush with the reserved milk mixture

and bake for about 20-25 min or until golden brown.

Remove from the oven and let the scones cool down on a wire rack

Serve them warm.
