There is no better way to brighten your day {or mine}, than by consuming some sort of baked goodness strait from the oven. The problem for me today was that, well, I sort of need to go grocery shop, BAD. So I decided to whip up a batch of these three ingredient Peanut Butter cookies. So amazing, and you can even make a vegan version as well! Dip them in coconut milk, and try not to eat the whole batch like I did!

Preheat oven to 350.
Ingredients for 3 Ingredient Peanut Butter Cookies:
1 Cup Peanut Butter {or any nut butter you like… I prefer salted}
1/2 Cup Sweetener {agave, raw sugar, or splenda}
1 Egg {or 1 egg replacer for Vegan}
Stir all ingredients in a bowl.
Bake for 8-10 minutes depending on the size of your cookie.
{If you’re feeling like a fatty like I did today and want to add Nutter Butter frosting… you can mix 1/2 C. Butter, 1/2 Peanut Butter, 2 Cups Powdered sugar, and 1 T. milk…. for seriously the best peanut butter frosting ever! Frosting recipe adapted from here}
