Good Morning! This morning has been wonderful so far…. drank lots of coffee, and heading to Coronado Island with the husband… a daytime date. Ready to soak up the sun and head over to Burger Lounge for an awesome veggie burger and Chocolate Malt. Yum. But first I wanted to share with you the breakfast I made! It seems more difficult than it really is… and the hints of orange are AMAZING… sorry for the pics my battery is low on my Canon… had to go with the good ol’ iPhone.

Cranberry Apple Pancake Recipe

Ingredients:

2 T butter

1 small apple, peeled, cored, and chopped

1/4 dried cranberries

1/4 cup packed brown sugar

1 T chopped orange peel

1/4 cup orange juice

3/4 cup flour

4 teaspoons granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1 beaten egg

1/2 cup buttermilk

4 teaspoons cooking oil

Directions:

Preheat oven to 350. Place butter in 9 inch pie plate, place in preheated oven until butter is melted. Remove from oven, fill pie plate with apples and cranberries.

In small saucepan combine brown sugar and orange juice, bring to a boil and then simmer for 5 minutes. Pour over fruit in pie plate.

In a medium bowl combine remaining ingredients, stir until smooth. Spread mixture gently with spatula on top of fruit sugar mixture in pie plate. Make sure to just spread on the top…. do not let fruit mix in!

Bake in oven for 15-18 minutes, just until top springs back when touched. Cool for five minutes in pie plate. When done this is what it should look like.

When the five minutes is up…. gently take both hands and flip pie plate over on top of serving platter. Cut into wedges and serve warm! Left overs are great reheated as well! Enjoy!!!
