WIAW Veggie Edition

I finally dished up a lot of extra servings of veggies. I get stuck in these ruts where all I do is eat the same thing over and over again. I was determined to eat more veggies so I went to the grocery store and stocked up. This is what I ended up eating.

Breakfast: Ezekiel bread toasted with lettuce and 1/2 cup scrambled eggs and nutritional yeast
I just recently bought Ezekiel bread because it was recommended on the Live Fit trainer plan. Lunch: I dished up 2 heaping spoonfuls of Tribe Hummus with a ton of veggies: broccoli, green beans and carrots. I couldn’t decide which flavor hummus I wanted to I used a scoop of Sundried Tomato and Basil, and a Scoop of Cracked Chipolte Pepper. I still don’t know which one I like more, they are both so good!

Snack: I snacked on some dill pickles and dried fruit throughout the day, but I forgot to take pictures. I did however sneak a shot of my tea time! Yogi Carmel Apple Spice Snack Time tea. It was very good and sweet and totally satisfied my sweet tooth! PS – I love the sayings on the tea bags!

Dinner: Chicken strips covered in Mrs.Dash seasoning on top of a salad with nutritional yeast and balsamic dressing. Broccoli with tomato sauce on the side. A Hersey chocolate kiss (or two) for dessert.
