Whole Wheat Strawberry Banana Pancakes Recipe

Pancakes are a breakfast staple in many homes, probably because they’re easy to make and are immensely customizable. You can make all kinds of pancakes – Apple Pancakes, Maize Pancakes, Savory Veggie Pancakes, Oats Pancake and Wheat Pancakes. Since this is the season of love and there are a lot of strawberries in season, we’ve got the perfect pancake recipe for you – Whole Wheat Strawberry Banana Pancakes. The sweetness of the bananas go really well with the tartness of the strawberries, making this a breakfast to love!

Whole Wheat Strawberry Banana Pancakes

Ingredients:

  • 1 cup of Whole Wheat Flour
  • 1 teaspoon of Baking Powder
  • ½ teaspoon of Baking Soda
  • A pinch of salt
  • 2 ripe Bananas
  • 10 medium sized Strawberries
  • 1 Egg
  • 1 cup of Buttermilk
  • 1 tablespoon of Vanilla Extract
  • 1 tablespoon of Coconut Sugar (optional)

Instructions:

1. Whisk the whole wheat flour along with a pinch of salt, baking powder and baking soda in a large bowl and keep aside.

2. Add the banana and strawberries in a blender and blend at lowest spend into a chunky puree.

3. Add the eggs, buttermilk, vanilla extract and sugar (if using). Blend for a minute. It is fine to have few chunky pieces of strawberries.

4. Add the wet mixture into the dry flour blend and mix until just incorporated.

5. Heat a non-stick frying pan and lightly grease with oil or butter.

6. Pour about ¼ cup of batter into the hot pan. Let it cook undisturbed, till bubbles appear on the surface.

7. Flip with a spatula, and cook until browned on the other side. Repeat with the remaining batter.

8. To make it extra special for Valentine’s Day, either try to pour the batter in a free form heart shape. Or make round pancakes and use a heart shaped cookie cutter to cut into little heart pancakes.

9. Serve warm with Maple syrup or honey. You can also try cream.

Another serving option is with some juicy, fresh fruit. Go for seasonal fruit; in this case – strawberries!

If the bananas are super ripe, they are sweet enough so you don’t need any additional sugar. But if the bananas are not very ripe or the strawberries are too tart, please a tablespoon or so of coconut sugar or regular sugar. Although with the syrup and fresh fruit toppings, they’re going to be really good just the way they are!
