White Sweet Potatoes with Orange Mojo

Do you know about white sweet potatoes?  Last year I posted my recipe for Mashed White Sweet Potatoes…something I had not tried before.  Today I tried making a recipe from Rick Rodger’s The New Big Book of Sides: More Than 450 Recipes for the Best Vegetables, Grains, Salads, Breads, Sauces, and More,  This new book arrived in the mail yesterday, and already I can tell it will be one of my favorites!

I was actually planning to make the “Sweet Potato and Pear Casserole with Bourbon, Bacon, and Maple Syrup” but  as I peeled the sweet potatoes I purchased for the recipe, I discovered that they were actually white inside!  So I adjusted the plan, looking through the book for a recipe that uses white sweet potatoes instead.  The recipe I found was “Steamed Boniato with Orange Mojo”,  and it turns out that this recipe is really easy!

Rick’s instructions were to peel the potatoes and cut into 1 inch chunks, then steam them.   I had already peeled mine and cut them into 1 inch rounds, and they were merrily bubbling away in boiling water.  Oops.   So I just let them finish cooking,  and when they were tender I drained the pan and cut them into 1 inch cubes.   Then I made Rick’s orange mojo using extra-virgin olive oil, chopped garlic, orange zest, orange juice, lime juice, salt and pepper.   I pulled some cilantro out of an herb salad mix that I had in the fridge for the garnish that was called for in the recipe.

What a tasty side dish!  Light, with the hint of citrus and cilantro adding a festive holiday twist to the mild sweet potato.  I’m loving this cookbook, with so many practical recipes that are great for family suppers throughout the year,  but fun for the holidays when you need something creative for a potluck.   This one is perfect for Thanksgiving too!
