The holiday season is on the horizon (are you counting the days like me?) and that means there’ll be lots of gatherings coming up. This latest recipe is perfect for entertaining and I hope you’ll love it as much as I do. Besides tasting great this snacky delight is also something that you can whip up relatively quickly. The crackers can be baked in advance and the feta can be whipped in minutes, so there’s no last minute stressing just before your guests arrive.

I used classic basil pesto with this creamy whipped feta as it’s my absolute fave, but there’s nothing stopping you from using any pesto you like, as it’ll still taste fantastic with the feta. I’m thinking of trying it with tomato pesto next. To save time you can use a store bought pesto, but if you’d like to make it from scratch why not try the pesto recipe I used here.

The sesame seed crackers can be cut into any shape you like. I used a small circle cutter for these photos, but triangles also work well and are perfect for scooping up lots of feta. Just keep an eye on the crackers while they’re in the oven (baking time will vary with different sizes), and take them out when the edges are golden.

Note – I used a small 4.5cm circle cutter for this batch and ended up with 45 crackers. Yield will depend on the size of the cutter you use. You can also cut out triangles, rectangles or squares by hand.

WHIPPED FETA WITH SESAME CRACKERS

  • Servings: Makes about 45 small crackers, Whipped feta serves 6

Sesame crackers

  • 125 g cake flour
  • 75 g sesame seeds
  • 2.5 ml (½ tsp) fine salt
  • 5 ml (1 tsp) ground cumin
  • 25 ml olive oil
  • 60ml water

Whipped feta

  • 240 g feta cheese
  • 100 g medium fat cream cheese
  • 15 – 30 ml (1 -2 tbsp) plain yoghurt, to taste
  • 30 ml (2 tbsp) basil pesto

1.) Preheat the oven to 180ºC and line a large baking sheet with baking paper.

2.) Combine the flour, seeds, salt and cumin in a mixing bowl. Add the olive oil and half of the water and mix until the dough starts coming together. Continue to add the water gradually and mix until the dough comes together.

3.) Roll the sesame dough out thinly between two sheets of baking paper. It should be no more than 2mm thick. Cut out small circles, triangles or rectangles and arrange on the tray. (See note above.) Gather the scraps, re-roll and cut.

4.) Pop the tray in the oven and bake for 15 minutes or until the edges of the crackers are golden. Carefully transfer to a cooling rack and leave to cool completely.

5.) Place the feta in a food processor and blend for a few seconds until crumbly. Add the cream cheese and yoghurt. Process for a few minutes until well combined, scraping down the sides as necessary. Check the seasoning (I find it’s salty enough from the feta).

6.) Transfer the whipped feta to a serving bowl. Top with pesto just before serving and enjoy with the sesame crackers.
