What a weekend! I hope yours went well. I can’t believe another Monday is upon us. My weekend was both low key and productive. I did some test cooking/baking in between resting since this week I will be very busy. I am trying to keep my head on straight, ducks in a row, my I’s dotted and my T’s crossed. This Double Chocolate Chip Zucchini Bread is one of the treats I baked and boy am I glad I did. It was my first time baking with zucchini and it certainly won’t be my last. This bread is moist, flavorful, and oh so delicious. The zucchini keeps it super moist and the chocolate is the icing on the cake or in this case bread.
I adapted my recipe from the one found over on the Brown Eyed Baker. When I pinned this bread several weeks ago I just knew it would be a hit! Brown Eyed Baker never disappoints.
