Weekend Roundup: Chocolate, Blueberries & Ice Cream

Vegan Coconut Chocolate Ice Cream II Chocolate. Blueberries. Ice Cream. Three ingredients that epitomize summer in my book. Another eventful weekend for me here in Upstate New York. The fog and fatigue from the “fibro monster” threatened to sabotage the plans I made to spend time with my best friend. Fortunately my will and determination are much stronger. I am paying the price of engaging in a “somewhat normal” weekend but that’s ok. I have this wonderful creamy & cool Vegan Coconut Chocolate Brownie Ice Cream to comfort me. When I spotted these confections over at Minimalist Baker they immediately went to my Pinterest. I mean a triple does of chocolate with chunks of Vegan Black Bean Brownies! Truly a chocolate lovers heaven.

These Vegan Black Bean Brownies are the real deal. Even though the ingredients seem farfetched; no one would ever suspect that they are made with black beans and are flour-free, egg- free, dairy free, and gluten free. They are delicious, soft, decadent and A+mazing. However, my weekend wasn’t all splurges and treats. I remained healthy conscious and whipped up this yummy Blueberry Smoothie for breakfast on both days and had my fill of watermelon, fresh romaine from my garden, and tomatoes.

Vegan Black Bean Brownies (Recipe courtesy of Minimalist Baker)

* I added an additional 1/4 cup of raw sugar + 1 tablespoon of pure maple syrup. I would also suggest that you start with just 1/4 cup of cocoa powder and add more according to your taste. Cacoa powder has a strong flavor and 3/4 cups may be a bit much for some.

* I used rice milk in place of the almond milk & only 1/4 cup of cacao powder.
