Recipe is from a book that we got from my kid's Pediatrician's office. Even though my 5 year old wasn't very impressed with the salsa, I really enjoyed it's refreshing taste. I served it with Grilled veggie Quesadillas
Ingredients:Watermelon - 4 cups, peeled and cubed
Fresh Lime Juice - ¼cup
Green chile pepper/ Jalapeno - 1 small, finely chopped (or use ½tsp chili flakes)
Fresh Mint leaves - 3tbsp, chopped (replace with basil leaves, if you want)
Method:
- Put all the ingredients in a bowl and mix well. Serve right away or cover and refrigerate 1 hour, but no more than 3 hours.
