Walnut Charcoal Loaf

I just bought a fresh bag of walnut and we ran out of bread, so Walnut Charcoal Bread it will be for today.Walnut Charcoal LoafFindings: Totally love this combination.  Even my highly sensitive taste bud mom gave a thumbs up for this.
Definitely a keeper.
What you need:
Sponge dough
100g bread flour¼ tsp instant yeast10g castor sugar60g water
Main dough
150g bread flour50g plain flour1 tsp charcoal powder4g instant yeast20g castor sugar½ tsp salt
30g egg100g cold water
30g unsalted butter, softened
Method:
Mix sponge dough ingredients to form a rough dough.  Cover and let it sit for 1 hour.  Chill for 12 hours.
Combine sponge dough and main dough ingredients with egg.  Knead to a smooth dough.
Add in butter and continue to knead till it reached window pane stage.
Shape into a ball and place in an oiled bowl.  Cover and let it proof for ½ hour.
Divide the dough into 60g each.  Shape into a ball and let it rest for 10 mins.
Flatten the dough with rolling pin and roll into a oblong. 
Spread fillings and roll.
Enjoy!
