Chef Bendo was inspired by his Lola's delicious Ginataang Kuhol.  This delectable coconut milk-based dish is native to her region in Gandara, Samar. Chef Bendo's take of the childhood favorite is elevated to such a degree that will make his grandmother proud!

Chef Mike made this classic Filipino favorite Lumpiang Ubod with his uncle and aunt in mind: "During my high school days, I usually went with my Uncle to help him saw coconuts. I was wondering that time what’s with them going gaga over the coconuts. Then my Uncle asked my Aunt to cook it for us. She wrapped it with something white, which I didn’t know what it was that time. It was Lumpiang Ubod my Aunt said. And I loved it ever since. I keep making them because everybody likes it."  And indeed, the dish is awesome. Light with its finely sliced coconut core and carrots, clean-tasting with a fresh leaf of lettuce, and rich with the mildly sweet sauce. Heartwarming and delightful.

Chef Anthony serves Pinangat for his wife, who has always been a fan of the dish since childhood. This family favorite transcends generations as it truly captures the beautiful Bicol heritage with its harmonious blend of taro leaves, chili, meat and coconut milk.

Chef Allan's take on sisig should make every sisig fan proud! For him, sisig is "one of the authentic dishes Philippines offer. It is also one of the first dishes I have learned to prepare and cook. As a tribute to the Philippine Independence Day, I have decided to infuse this Filipino favorite to my line of cuisine, Italian cooking."

 Another delicious dish from Bicol: Bicol Express. Chef Rey has decided to create a milder variant of this spicy dish for his parents who love it so much. "They taught me how to cook it from scratch when I was just a teenager back then. I kept on practicing because I wanted it to be perfect for my parents. Now, I want to share this with Vikings because they’re now my second family."
