Veggy Prawns on Old Bread

“Yesterday, at lunch time , we were hungry but not quite feeling like going out “hunting gathering”. This is why I looked in the fridge, then the freezer and finally the garden, to make lunch.  The result was rather delicious , or so i thought.

Ingredients:
4 small green peppers  and 20 cherry tomatoes from the garden
2 garlic cloves from the basket
Some Parmesan cheese and 1/2 an onion from the fridge
8 large frozen prawns and 1/2 an old baguette from the freezer.
some herbs from the back of the cupboard

How to:
First I sliced the garlic finely and fried in a two spoons of olive oil till brown whilst chopping the peppers finely. (If you do this, please make sure you use a low heat to avoid burning.)

I then removed the garlic from the oil, put them aside for later them and fried the peppers in the same oil whilst chopping the onion. When the peppers were soft, i added the onion till brown whilst halving the tomatoes.

With the tomatoes in the pan, i tasted and seasoned. I also added: oregano, thyme and rosemary.

I left the mix cooking for around 8 minutes on a low heat , preheated the oven on a gas mark 6, sliced the bread in thick slices and covered the base of an oven proof dish. As the tomato mix thickened, I added the prawns to it for a minute.

I then poured the mix on the pan to the bread the bread base and topped it up with the garlic and a generous layer of grated Parmesan cheese.

I finished the dish on the oven, gas mark 6 for 20 minutes… until the top became golden.”
