INGREDIENTS
- 3 whole wheat tortillas
- 1/4 tsp paprika
- Pinch of cayenne
- Salt to taste
- 1 lime juice
- 1/2 cup kidney beans, boiled
- 1 avocado mashed
- 2 tomatoes, sliced
- 1 onion chopped
- 2 oz. sunflower seeds
- 4 stalks asparagus, trimmed
DIRECTIONS
1. Sautee asparagus for about 2-3 minutes on greased pan.
2. Pour kidney beans, cucumber, tomatoes, onion and asparagus in bowl.
3. Season with paprika, cayenne, salt, lime juice and give them a good toss.
4. Toss tortillas on heated skillet for about 2-3 minutes both sides.
5. Assemble above mixture on tortillas and serve.
6. Add avocado mashed and sunflower seeds on top.
7. Serve and enjoy!
