Vegan Zucchini Fritters Recipe

INGREDIENTS:

  • 1/2 cup of Nut Cheese, grated
  • 1 zucchini, chopped
  • 1 garlic clove, minced
  • 2 scallions, chopped
  • 1 teaspoon of jalapeno, chopped
  • 1 tablespoon of margarine
  • 1/2 cup of oil
  • 2 eggs

DIRECTIONS:

In a bowl, place zucchini and sprinkle salt, mix well and let it marinate for 3o minutes. Squeeze zucchini with hands to remove excess water. Mix in butter, garlic, cheese, scallions and jalapeno. Use hands and roll into large balls and then flatten into a fritter.

Whisk egg in a shallow plate. Dip fritter in eggs. Heat oil in the frying pan, place the fritter and fry 5 to 10 minutes each side over medium heat.
