Although these photos are from a while back, I thought Easter Sunday would be a great day to share with you my favorite VEGAN and healthy banana and chocolate chip cupcake recipeThis recipe has been adapted through the years from one a friend gave me (thanks Maria!). Since some of the products aren't too common I've included links to the products I use from Iherb.Scroll to be bottom to get a 10$ discount code for Iherb!Ingredients: 1. 3 bananas (mashed)2. 1/2 brown sugar3. 1 vegan egg substitute (cheap one here!)4. 1/3 any vegetable oil (must try this with coconut oil, here!)5. 1 cup flour (I used 1/2 plain and 1/2 whole weat)6. 1/2 cocoa powder (I used this one)7. 1/2 tsp salt8. 1 tsp baking soda9. 1 tsp baking powder10. 1 cup vegan choco chips

Steps:1. Preheat oven at 180 degrees2. In a small bowl mix ingredients 1 to 43. In a large bowl mix ingredients 5 to 94. Incorporate the wet mixture to the dry ingredients until just combined5. Fold in ingredient 106. Spoon batter into cupcake liners and sprinkle with some choco chips and a nut that looks like a mini brain (optional)7. Bake for about 20-25m until toothpick comes out clear.8. Eat warm, dipping into a strawberry smoothie (this is not optional ;))Use the code HLT070 to get 10$ off your first purchase on Iherb. Yay!
